Splash is the hour before dinner, taken seriously and poured lightly. Four wines, three ounces at a time, at $8, $9, $10 and $11. Each is chosen for discovery rather than familiarity, which is a polite way of saying: order the one you've never heard of. Three ounces is not a commitment. It's an introduction.

Your first Splash includes a welcome bite from the kitchen. When a little something calls for a little more, three pairing bites are standing by.

Now pouring: Women Behind the Wine. Four wines, each with a woman behind it. Her name comes first, as it should. Through November 25.
